TiMANimal Posted April 29, 2013 Share Posted April 29, 2013 I make an egg casserole (1lb browned ground sirloin with half an onion cooked with it, 18 eggs, handful of cherry tomatoes cut in half, 2 handfuls chopped fresh baby spinach, half a bunch of fresh asparagus cut into small pieces, 1 tblsp coconut butter). I sauté the meat and onions together in a non-stick pan with no oil or butter, scramble all the eggs in a large bowl, add all the ingredients except the meat and onion to the eggs and mix well. Coat a casserole dish with the coconut butter; put the meat and onion on the bottom of the pan to act as a crust. Pour egg mixture in on top. Bake at 425 till eggs are set. Makes me about 5 servings I eat as breakfast typically but anytime of the day it is delicious. I usually top each serving with wholly or other all natural salsa. I have it with 4-5 medium size strawberries cut in half and ¼ can of coconut milk poured on top of the strawberries, on the side. Dang good!!!!!!!!!!
