Discouraged by Weight Gain

I think sticking to the lower spectrum of the template and listening to your body is a good idea for you. Start with a plate as you have it, and then stop when you aren't hungry. If you finish the plate and are still hungry, then eat more. If you keep the sweeter/starchier things to the end of the meal (fruit, sweet potato), you will probably find that you just simply aren't that hungry or interested in eating too much. This should keep your insulin levels down and help you go into fat burning. In general it seems a good idea to only eat fruit after having fat & protein, so that you never get an insulin spike. That's how I take it, at least...
