Toss some root veggies on a baking sheet with olive oil, salt and pepper, roast at 400 degrees until caramelized and tender (about 30-40 minutes) or do a raw veggie slaw or salad. Stirfries are great. one-pot meals are my favorite, I hate making separate side dishes. Well fed by Melissa Joulwan (the first one) has a great description of Hot Plates, which are what Mel cooks in her own home most days of the week. Basically they are stirfries, one-pan meals that can be thrown together in minutes (she partially pre-cooks her veggies and has meat cooked also so they come together even faster, but I prefer to start from raw ingredients) and she has combinations to replicate flavors from all around the world. There's greek, indian, moroccan, french, eastern european, american, and others. Both her cookbooks are awesome also, and almost all the recipes in both are whole30 approved.
