LisaLulu Posted August 21, 2014 Share Posted August 21, 2014 This soup is a mainstay for me, it's a great way to get in a ton of veggies and feel full. Saute 1 chopped onion (any type) in compliant fat add in 2 stalks chopped celery 2 or more chopped carrots. once onion is browned add in 4 cups water, 1 teaspoon salt and a can of tomato paste (unsalted... or use less salt). Also add whatever veggies you want to use up (I often use zuchinni or cauliflower or cabbage). You can also add diced potato if you want to add more starch/calories.
