O2BHealthy Posted January 9, 2015 Share Posted January 9, 2015 I love broccoli tops; fresh or cooked; but am not so crazy about the stems. Until now... Below is a recipe that turns the stems into a delicious side dish. This should be enough for 1-2 broccoli stems; depending on how thinly you slice them. Of course you can always double up on ingredients if you have more to cook. And since this is just broccoli, not raw meat, the leftover ingredients can be included in your next omelet. Enjoy! Ingredients: Broccoli Stems 1 Egg 1/4 tsp. Coconut Aminos 1/2 Cup (finely) shredded Coconut 1/2 tsp. Salt 1/2 tsp. Garlic Powder Directions: In one bowl, combine egg and coconut aminos. In another bowl, combine shredded coconut, salt, and garlic powder. Broccoli stems do not need to be peeled; but you will want to clean them up and cut off any brown spots where leaves have been. Then, slice the stem into thin "coin" slices. (It is easiest to start at the top and work your way down to the base of the stalk.) Stir the broccoli into the egg mixture so that all pieces are coated. Then take each piece separately and coat it in the dry mixture before laying it on a cookie sheet.
