missmary Posted May 24, 2015 Share Posted May 24, 2015 the whole30 has no rules with regard to pasteurization or ph. What matters are the ingredients: no off-plan ingredients, it is permitted. Regardless of the whole30 rules, it might be relevant to note that pasteurization of water is a food-safety precaution, and water does not have components that are damaged during the pasteurization process. Also, be aware that the body is very efficient at maintaining proper ph levels. Levels in the range of 3.5 and 4.0 are similar to orange juice--slightly more acidic than optimal, but not particularly problematic in moderation.
