Rhubarb -- How?

So obviously rhubarb is a compliant food by itself.  But have you ever tasted rhubarb by itself?  Yowza!


I love the stuff, though, and my mom has been talking about her rhubarb sauce, which is basically rhubarb, sugar, lemon, and some maple syrup, cooked into a lovely sauce you can put over roast pork or just about anything else.  Or eat by itself.


So -- has anyone made anything compliant using rhubarb?  I'd like to add it to something, but without sweetener, it's pretty painful.


ThyPeace, got used to black coffee and unsweetened chocolate, but is not sure about this one.
