Mayonnaise

Yeah! I'm feeling so pleased with myself. I saved my mayonnaise. I've only made it twice.Tthe first time I made it, it was perfect and I loved it (used the recipe in Well Fed). This time it curdled and looked awful, I've no idea why as I did everything the same. I was trying to work out if I could do anything with it, when I remembered being told, you could start over with another egg and add the curdled mixture to it. So I scraped it out the blender, beat up another egg in it and slowly added the curdled mess back in. It Works!! I now have perfect mayonnaise and feel so chuffed with myself :).
