Brisket sauce didn't thicken up

I haven't tried that recipe yet, but when you cook things in the crockpot, you definitely would need less water -- the slow cooker instructions do say that, but you may even have needed less than that. Did you put the sauce in a pan on the stove to simmer for a while? If it simmers long enough, it will reduce -- it may just take longer.
