Started day 2 with a breakfast of organic eggs scrambled with leftover sockeye salmon and scallions. Yum! I just finished making mayonnaise. Let's face it, the taste and texture are far superior to commercial concoctions. I actually found chicken Italian sausage with no added sugar or nitrates, so I'm planning to use it for dinner tonight.

The only result from yesterday's food choices is having to get up in the middle of the night to pee. I've obviously been retaining some extra fluid. ☺️

There's no doubt that I'm experiencing a "beginner's high". Here's to sustaining it.
