Its a good way to get some healthy greens in with all the winter squash this time of year! http://www.simplyrecipes.com/recipes/roasted_butternut_squash_kale_saute/ Recipe calls for it to be eaten warm - I preferred it cold (with some leftover roast from the Instant Pot).
