Last night I made an amazing dish that I found on-line and it was as tasty as any dessert I've ever had. I never realized how much fresh mint enhances the flavor of fruit. Watermelon with mint and lime 6 cups (about 3/4 pound) seedless watermelon cubes, from about 1/4 seedless watermelon (rind removed) 2 tablespoon chopped fresh mint 1 tablespoon extra-virgin olive oil Juice of two limes In a large bowl, toss the watermelon cubes with the mint, olive and lime juice. Chill the sald for at least 1 hour before serving. (I don't like cold fruit so I just let it sit on the counter for one hour and it was delicious.)
