Benjamin Shine
This seems so simple, but I hadn't thought of it until I saw it in Well Fed, which is an amazing recipe/cooking book by Melissa Joulwan. Melissa & Dallas wrote the forward. Everything I've made from there has been amazing. http://amzn.com/061557226X But so, toasted coconut -- it's this easy! Heat up a non-stick skillet to pretty hot Dump in a handful of coconut flakes, to where they are in roughly a single layer When they start browning, mix 'em up Take em off the heat in about 2-3 minutes Mix them in a bowl with a teaspoon or so each of cinnamon and salt. Eat immediately... AMAZING and 100% Whole30 compliant. It's so easy, but it would be so hard to package and sell; the coconut flakes would break in transit, or they'd go soft and stale before they left the shelf. I've already made two batches. Johnny M
That is a fantastic book and Melissa J is awesome and I survived almost solely on those recipes for my first whole30.
