Jo Ferris
I just "invented" something SOOOO good. Made a broth from a chicken carcass, sage and Kirkland no salt organic spice mix and salt I seived out the carcass then added sweet potato, onion, celery, carrots and garlic. it was quite a brothy soup... not a lot of chunks in it but more than sweet and sour soup. Then I added about 2 cups of homemade coconut milk and the chicken chunks... then I added 6 whisked eggs, like egg drop soup and a little more salt! it would taste egg-cellent (groan) with ginger and lemongrass too I'm thinking... and some green onion on top at the end. Melissa Urban
Sounds delicious! I'm into soups this time of year - especially complete meals-in-a-bowl.
