Do you lose enzymes during W30?

Almost done with my second W30, and really want to focus more on careful reintroductions this time.  There's one nagging question that really bothers me...if you don't eat a food for 30+ days, do you lose the enzyme that helps you digest it?  Beans need bean enzymes, dairy needs dairy enzymes...do you "lose em if you don't use em?"
