Zoodles Posted March 30, 2013 Share Posted March 30, 2013 My friend just recommended grated raw beetroot and carrot mixed together to me yesterday - and yes it's delicious. I also love slicing veggies and putting them in my sandwich press, super fast and easy, works with sweet potato slices, eggplant, zucchini, you name it. My 3 favourites at the moment though are 1) twice baked sweet potato with onion, and different spices/chives etc 2) sandwich pressed zucchini mixed with sliced red capsicum and sautéed mushrooms with balsamic/mustard/mayo dressing and 3) sloooowly braised fennel and leeks. CraftyCarnivore Posted April 1, 2013 Share Posted April 1, 2013 I just made parsnip fries last night. I went into that with very low expectations but they were the bomb! Cut up four parsnips and roasted them at 450 convection, with evoo, salt, pepper, garlic powder and then tossed a couple of Dorot parsley cubes with them for color when they were nearly done, Link to comment Share on other sites More sharing options...
