What do you think of this meal. 3 diced parsnips, 1/2 diced onion, 2 cups diced roast beef, sauté in

1 tablespoon of coconut oil. saute till parsnips start to brown, add

add onion, cook till soft, add meat and brown, Top with 4 eggs

turn heat down to low and cover till eggs are done. Salt and

pepper to taste. serves 2 I loved it and so did my Husband.
