Guest
We picked up a smallish stick of burdock yesterday. They sign said that it would go well in soups and other dishes. Now, I am having trouble finding non-soy examples of how to use it. Please share any tips you may have.

annabel
http://japanesefood.about.com/od/vegetable/r/kinpiragobo.htm was one of my favourite Japanese side dishes, you'd need to replace the soy sauce though and sake.
Guest
Th sign at Whole Foods said that it would be good at soup. I had some turkey this morning, so I simmered the grated burdock in the turkey broth with some carrots. I added some mushroom and spinach and then tempered some eggs and added them to increase the amount of protein. Not sure exactly what burdock tastes like after all of that. The soup was very rich and flavorful.
