Megan_M Posted September 19, 2013 Share Posted September 19, 2013 I'm having a hard time keeping up my carbs without overloading on sweet potatoes I'm 28 weeks pregnant and diagnosed with gestational diabetes. I had it with my first but I wasn't paleo then. Here is a quick food diary: Meal 1: 2 eggs, 1/2 aidell's apple chicken sausage, cooked in coconut oil 1/2 sweet potato made into a hash Coffee with 1/2 c coconut milk Snack: apple with almond butter packet Meal 2: leftovers or this week was bacon chicken Alfredo with spaghetti squash Carrots with ranch (tessemae's) Cashews Snack: mini larabar, chicken Meal 3: variety of paleo meals but most likely 1/2-1 sweet potato. I can have 2-3 fruits and need to eat snacks in between meals. My meals need to have 45-60 grams of carbs. Any ideas at how to eat enough carbs without eating sweet potatoes all day?? Mom2A&M Posted September 20, 2013 Share Posted September 20, 2013 I love roasted parsnips in ghee. I cut them like French fries, toss in ghee and salt then roast until golden brown. Maybe making a soup out of a winter squash would be a little different than baked sw potato. Tonight I made a canned pumpkin reduction that was very tasty. 1 can pumpkin, 1 can water, 1 grated and peeled apple, cinnamon, pinch of salt and splash of lemon juice.
