Creative way to enjoy turkey, either at Thanksgiving or other holidays. GFChris Posted December 30, 2013 Author Share Posted December 30, 2013 I did end up making this on Christmas Eve and it was a huge it! We assembled it the day before, refrigerated it, and then popped it in the oven on Christmas Eve. Cooked perfectly following the temperatures and times in the recipe.Modifications I would suggest:- skip the 2 tbsp salt in the turketta. Not needed because of the salt in the capers and pancetta.- I would double the pancetta to 1 lb- I would decrease the red pepper flakes in the turketta to 1 tsp (I decreased to 1 tbsp and even that was still a bit much) Link to comment Share on other sites More sharing options...
