Vian
I love quiche. For me, the crust was nice, but not absolutely necessary. I've tried one "paleo" pie crust, but the almond meal and coconut oil made it way too sweet tasting - perfect for a fruit pie, but kind of gross with a quiche. I've made crustless quiche, but I really hate the flavor/texture the egg gets where it cooks against the baking dish. Any ideas for creative crusts? I was considering lining the pie pan with slices of ham, but I'm afraid the egg would seep between the slices and I'd have the same issue as the crustless quiche. I'll still probably try it though. GFChris
Shredded sweet potato, cooked in coconut oil, just until crispy. Press them on the bottom and up the sides of whatever baking pan you use. Pour your quiche contents in, bake and enjoy.
