MonicaM325 Posted June 1, 2014 Share Posted June 1, 2014 So I just bought some rhubarb since it is now in season and I wanted to try something new when I start my 3rd Whole30 on June 3...however all the recipes I am seeing for rhubarb include some type of sweetener (as a compote) or are included as a type of pie or muffin. Libberation Posted June 5, 2014 Share Posted June 5, 2014 I made roasted rhubarb and strawberries the other night! The recipe called for maple syrup but I just eliminated it, strawberries were sweet enough. Just roughly chop the rhubarb stalks, halve the strawberries, mix in a few table spoons of vinegar, add salt and pepper, a dash of olive oil and roast on a rimmed baking sheet lined with parchment paper (to keep the juices from running into your oven) at 350 degrees for 30 minutes.
