what do i do with rhubarb??

So I just bought some rhubarb since it is now in season and I wanted to try something new when I start my 3rd Whole30 on June 3...however all the recipes I am seeing for rhubarb include some type of sweetener (as a compote) or are included as a type of pie or muffin. Anyone have any idea how I can use these while on the whole30? I don't want them to go to waste!!

I made roasted rhubarb and strawberries the other night! The recipe called for maple syrup but I just eliminated it, strawberries were sweet enough. Just roughly chop the rhubarb stalks, halve the strawberries, mix in a few table spoons of vinegar, add salt and pepper, a dash of olive oil and roast on a rimmed baking sheet lined with parchment paper (to keep the juices from running into your oven) at 350 degrees for 30 minutes. Delicious! I ate it with duck livers and on pork chop for breakfast.
