SherriOR
I have been making ham roll ups with avocado and spinach inside. They are an easy thing to have for lunch, but I am uneasy about eating so much ham. Also, it is hard to find out the quality of h in the deli case. Advice ? GFChris
If you live in the U.S., I question whether your ham is truly compliant, as it's very tricky to find ham without sugar or sweetener in the U.S. Deli meats in general, are challenging to find compliant since they're also suspect for gluten, soy and carrageenan. In any case, I would switch up your lunch protein, so you don't get bored, and to have better protein options than pork and standard deli meat. My personal favorite for easy lunch is chicken or salmon salad made with celery, compliant pickles and compliant homemade mayo, with a microwaved sweet potato, also with compliant homemade mayo.
