Hayesydaisy Posted October 28, 2014 Share Posted October 28, 2014 Compliance question...I know kombucha is compliant if there is no sugar added to the second fermentation ( I brew my own so I know mine is compliant), but I just found a recipe for kombucha mustard that calls for 1 teaspoon of sugar and needs to ferment for 1-3 weeks. Would that long of a fermentation process burn up all the sugar like it does when you brew kombucha?
