is kimchi really compliant??

I read in "It Starts With Food" that eating kimchi is ok and is actually encouraged because of the fermentation.

I've seen kimchi being made and I believe there is quite a bit of sugar that goes into it... and the red pepper paste has (or should have) rice/gluten components in it... doesn't that make it non-compliant?

There are different varieties of kimchi. You have to read your labels. If all the ingredients listed are compliant, then the kimchi is compliant. If one of the ingredients is sugar, it is not compliant. One brand that I know makes some compliant kimchi is Wildbrine -- but not even all their varieties are compliant, I know at least one had soy. But some of their varieties are compliant. You just have to read the labels.
