cflodeen
I'm a nurse case manager, I spend most of my day driving from patient to patient and rarely have time to stop and eat a good lunch, what are some good dry options I can make ahead and leave in my car so I don't have to worry about making a lunch every morning. I have nuts and things like that but it gets old thanks!!
GFChris
Can you use a small cooler or insulated lunch bag to take your lunch with you? That way, anything you can eat cold will work: leftover frittata, roasted chicken, cooked meats, grilled shrimp, egg/tuna/chicken/salmon salad, sweet potato, salad, sliced peppers, cucumber, olives, etc.
QuilterInVA
Nuts are more to be used as a topping or mixed into something else, not for a snack or meal. I second the cooler idea.
Ljmurray
I have been doing home health care for the past 19 years. I used to eat sandwiches and fruit as I was driving between patients. Now I stop for 15 minutes to eat lunch that I've packed in a cooler. I finally realized that it's important to stop and enjoy a meal during my work day. I am able to stay focused during the afternoon and keep from raiding the fridge when I get home!
