A portable gluten tester you can tote around and test your food before you eat it. http://nimasensor.com/ It' might be a bit bigger than I is practical. But I have visions in my head of what this portends. I foresee a smaller version that can test for all sorts of things you might like to be SURE isn't in your food. I personally wouldn't trust it, as it doesn't sample the entire meal but only small bits of it. If I'm worried about cross contamination in a meal, then I don't eat it. But I can see its utility for some users and for testing suspect parts of the meal. Could lead to exciting tools for us in the future too! And to be sure, gluten is not a FODMAP.
