Ah, okay Balsamic vinegar reduction is fine as long as the vinegar is compliant to start with (no added sulfites). The sweeter thing doesn't really apply to things like vinegar or bbq sauce since you're not going to then use it to sweeten paleo cupcakes or drink a mug of it to combat a sugar craving Do be careful tho, in your own context, does the reduction and its inherent sweetness cause more cravings?
