Gestational diabetes and fasting sugar help

I am 25 weeks preggo and was diagnosed early with GD. I am now on insulin and am still having trouble controlling my fasting glucose levels. My daytime post meals levels are perfect, without day time meds, just my fastings are high. I’m beginning a new round of W30 and my question is: Is there anyone with good bedtime snack ideas to go with my insulin to help my levels be lower?? I see a maternal fetal specialist and have tried to follow his recommendations but they aren’t working. I’m tired of eating food I don’t normally eat! He swears by a half of a peanut butter sandwich. I don’t eat bread typically and it’s not helping anyways so I’m taking control and revamping my diet my way. But looking for food suggestions for that bedtime snack.

No one here is a doctor, so we're pretty limited in what we can really tell you. 

If he's saying a peanut butter sandwich, that's going to have fat and carbs. Based on that, maybe a hard boiled egg with some mayo and a few carrot sticks or jicama? Leftover chicken with a bite or two of sweet potato or whatever starchy vegetable you have on hand? 

You might have to try a few things and see what works for you, but I wouldn't imagine bread is really necessary.

You could also google whole30 gestational diabetes, or paleo gestational diabetes, and see if you can find some more information.

I know this is old, but if anyone else is looking for this information...

GD diagnosed at 30weeks  100% diet controlled.

My dietitian advised me to have a fasting window of around 8hrs. I make a banana bread that is bananas, eggs, almond flour, cinnamon, nutmeg, vanilla ess and baking powder that I ate a piece of right before bed. She also advised that a high fat meal for dinner would jack up my numbers post testing window and even into the next morning.
