Sulfur dioxide start over?

Sulfur dioxide (SO2) is chemically neither a sulfate (SO4) nor a sulfite (SO3). You may want to avoid foods (produce, spices...etc.) that state sulfur dioxide was used during the treatment process, but technically the rules are specifically against sulfites.

The common additives cheat sheet (available here: https://whole30.com/pdf-downloads/) mentions sulfur dioxide specifically along with potassium metabisulfite and sodium bisulfite. They may not be chemically the same, but do get lumped together in information about sulfites in food.
