Sheila P. Posted January 4, 2019 Share Posted January 4, 2019 I’m starting my first Whole30 on Sunday and am in the process of stocking my fridge with compliant items. I’m wondering whether the prosciutto I found at my local grocery store is compliant. It has Potassium Nitrate which I haven’t been able to determine as compliant or non-compliant. laura_juggles Posted January 4, 2019 Share Posted January 4, 2019 Basically, if it's not specifically excluded in the rules (the rules list out pretty clearly what is not allowed), then it's allowable. That said, everyone is encouraged to do their own research to find out what that ingredient does and decide if they want to eat it.
