Here is the recipe: 4 carrots grated 1-2 tablespoons raisins 1-2 tablespoons dried cranberries 1-2 tablespoons shredded coconut 1-2 tablespoons pecan chopped 1-2 tablespoons walnuts chopped 1-2 tablespoons pumpkin seeds 1 tablespoon oil of your choice 1 tablespoon apple cider vinegar 1 tablespoon honey 1 teaspoon grated fresh ginger root 1/2 teaspoon Dijon mustard Salt and pepper to taste Step 1 Combine all the ingredients in a glass salad bowl Step 2 Whisk together the dressing Step 3 Pour over the salad and toss to coat Step 4 Serve immediately or leave in the fridge covered for up to 2 hours for flavors to meld Link to comment Share on other sites More sharing options...
