Time-management indicates you should chop and prep all your veggies ahead of time so you can throw meals down quickly. However, I've also heard that when you chop veggies they start to break down and lose nutrients faster, so you should keep them whole until you're ready to use them. What's the balance? I am eating so healthy that I don't worry about losing a tiny bit of vitamins from prepping ahead of time. What I don't do is purchase veggies like cole slaw, lettuce etc. that the store has prepped because who knows how long ago it was done. It's also a lot more expensive.
