I have had a couple of bars since my whole30 out of necessity, but am looking for something better! Thursdays I work 5am-1 and then 2pm-8 now my first job I have plenty of time to eat but during the second(it's bartending) I really don't get a break. So I usually run to the back eat a bar and a couple almonds and then eat a reg. meal when I get home. But does anyone have ideas of what I could eat instead? Something quick and easy? DH's favorite is this one: http://nomnompaleo.com/post/7486819479/prosciutto-wrapped-mini-frittata-muffins I have also changed it up and made mini turkey meatloaves in muffin tins - not a real recipe, but sauté any mix of veggies, I used diced onions, mushrooms & 2 handfuls of super greens (spinach & other leafy green mix) in your choice of oil. Allow to cool. Mix 1lb of ground turkey (I used a mix of breast & thigh meat), with the cooled veggies, 1 egg beaten & 1-2tablespoons of coconut flour. Season with salt & pepper. Place equal amounts into a 12 hole muffin pan. Bake in a 375oF oven until cooked & brown. Link to comment Share on other sites More sharing options...
GLC1968 Posted April 10, 2013 Share Posted April 10, 2013 I took these kale meatballs on a kayaking trip so I could have something to snack on as fuel while on the water and still in the boat. They were perfect because they were veggies and meat and tasty when cold. I used extra kale when I made them so my yield was kind of huge!
