heatherweber
Hi everyone! I will be going to classes this summer for my masters, and I am not sure I will have access to a fridge to put my lunch in. What are some good lunch options for a good meal that will keep me full. I guess I can also put an ice-pack in my lunch bag to keep stuff cooler. What are some of your favorite packed lunch combos? GFChris
I would go with the ice-pack inside insulated lunch bag option. With that in mind, some thoughts: - leftovers from previous meal - protein and a healthy sized salad with compliant dressing (protein options: sardines, cooked chicken, prosciutto, cooked turkey)- chicken, tuna or egg salad made with paleo mayo on top of a salad
MrsStick
You can pair pre-cooked meat with frozen veg, spices, sauces, etc. The veg will keep the meat cold until it's time to heat it up (microwave!) and it turns out pretty well.
GoJo09
I'm going to assume that if you don't have access to a fridge, you won't have access to a microwave. The cooler bag will give you the best flexibility (unless you like dancing with the Food Poisoning Fairy). So, go with salads and hard boiled eggs, tinned tuna/salmon, paleo mayo. The salmon fritters from ISWF are pretty good cold - again, paired with salad and avo. Roasted vegetables and cold sausages or chicken (definitely only do the chicken if you have an icepack in there - eggs and sausages would probably be ok for a few hours, but chicken can go dodgy quickly).
