anm54 Posted July 12, 2012 Share Posted July 12, 2012 So I just call these recovery cups because I pop one into the microwave right after my workout but they could also be a great snack or breakfast!! What you'll need: A muffin pan eggs any vegetable any meat salt and pepper cayenne pepper (optional) Directions: I crack one egg into each muffin holder and add a veggie and meat to each as well. Then stick it in the oven at 350 for about 15 min. This is very easy to make at the beginning of the week to grab whenever you want it! Switch it up with whatever you have. I made the Meat & Spinach muffins from Well Fed and found them a bit too dense for my liking. This sounds like it might be a better choice-thanks for the idea! Simone Posted January 6, 2013 Share Posted January 6, 2013 I add coconut milk (quarter to half a normal tin with 6 eggs) for a better texture (doesn't make it taste like coconut) My personal favourites: spinach, salmon, pine nuts Zucchini, onion, garlic, leftover caukiflower rice, poached chicken with italian herbs (or leftover chicken curry) Ground beef, bell pepper, onion in bacon.
