Either one is fine. I use Organic Valley cultured butter to make my ghee when it's available. It causes the ghee to have a more buttery taste, but there are no live cultures involved so no benefit there. If the regular is cheaper, I would just go for that one.

There is actually a good explanation on their website. It's cultured as in yogurt but because of the necessary heating process used to make all ghee, the live cultures are no longer live. They also state that for those with extreme lactose intolerance, cultured butter provides the missing enzyme to break down the lactose.
