At work we have a potluck every 2-3 months and it is always my job to bring my mother's award winning chili, the problem is that the recipe calls for it to be thinckened with cornmeal. Well, we obviously can't use cornmeal on paleo or whole30. What should I use???? I'm completely stuck!!! I have to cook the chili tonight for tomorrow. I bet coconut flour would taste too coconuty although I think the texture might be right... I wish you had time to experiment and report back! But when we have a potluck, and this one was announced at the last minute, my supervisor expects my chili! Lol The arrowroot worked ok. I added 1/4 cup, it's a lot of chili, and possibly could have added more. I use to thicken with 1/4 cup of cornmeal. No one noticed or complained that I used something different.
