Babsie95
I have a frozen bag of pure butternut squash puree. I think it would make a good soup but I am having trouble creating a recipe. I was thinking it could be as simple as to add bone broth and coconut milk but I feel like I am missing something. Any ideas???
Moderators Tom Denham Posted June 11, 2014 Moderators Share Posted June 11, 2014 Here is my version of Golden Cauliflower Soup from Well Fed 2. You could add onion, carrots, and some heat with cayenne pepper and crushed red pepper flakes... http://www.wholelifeeating.com/2013/11/pressure-cooker-golden-cauliflower-soup/
snowflower
I love this recipe for sweet potato soup: http://theclothesmakethegirl.com/2013/01/02/paleo-sweet-potato-soup/ You can easily substitute the squash for the sweet potatoes. Also....this recipe is just as good without the bacon (and it saves some time). Just saute your onions in lard or coconut oil or ghee and go from there. koleneg
I've made variations of this recipe many times, subbing coconut milk for the cream if desired. It's tangy, spicy, sweet, sour etc... http://www.tstastybits.com/2012/12/roasted-butternut-squash-and-tomatillo-soup/
Babsie95
thanks for the suggestions. I made the soup last night and then had some for breakfast this morning. I ended up sauteeing garlic in ghee and adding in the two cups of squash puree. I added bone broth, coconut milk, salt, cayene pepper and ginger. it was good. This morning I diced some roasted chicken added some of the soup and heated it. It was pretty thick so I added more bone broth and then once warmed a palm full of slivered almonds. It was yummy and I have several more servings, but ran out of bone broth so will have to use complaint store bought till I can make more.
