I had it tonight with green beans and avocado mayonnaise. I've had this at chipotle on top of lettuce with guacamole. So now what do I use it for? How can I creatively use this pulled pork. MrsStick Posted June 22, 2014 Share Posted June 22, 2014 You could put it in a pureed soup (think: silky gingered zucchini soup or sweet potato soup or butternut squash soup). You could put it on top of a salad. Roast slices of sweet potato and make a 'slider.' Plaintain chips. Mix with homemade mayo and hot sauce for a dip of sorts. Use to fill roasted portobello mushroom caps. Serve with sauteed onions and bell peppers. Put on top of cauli rice or roasted broccoli. Add it to a frittata or omelette with veggies. They probably mean slices of sweet potato -- like what's used in these sliders. That is totally compliant. Just another way to eat your veggies.
