May-Ling
Hi All, One of my FAVORITE things to eat are lightly fried plaintains in coconut oil. I'm wondering if these would be a post workout carb-dense veggie option? Any thoughts? Thanks, May
leahcarn
I wouldn't, as you want to avoid fat post workout ( it slows digestion). Could you dry roast them?
Moderators Tom Denham Posted September 6, 2014 Moderators Share Posted September 6, 2014 Plantains are a high carb source, which you may want after a workout, but plantains are also high in fructose. Fructose preferentially replenishes liver glycogen rather than muscle glycogen, so I am not sure you will get as good an effect eating plantains post-workout as you would a starchy veggie like sweet potatoes or rutabagas. May-Ling
Tom, thanks for your response. Are you thinking that by the time the glycogen gets from the liver to the muscles I've kind lost that time frame of full replenishment?
