Duck

So, I splurged and got us a couple of duck breasts at the farmer's market.  So, what should I do with them?  Anyone have any awesome techniques?  I've never cooked duck before, but that's the plan for tomorrow.

Duck is best cooked simply. After seasoning I brown mine in a frying pan skin side down, once it is all crispy I turn it over and put it into a hot oven until it is cooked the way I like which is not too well done but still pink in the middle. Then it has to rest for 10 minutes before carving.

Your cast iron skillet is beyond perfect! I use only salt & pepper, on both sides. Oven is hot, around 200c, roasting time depends on the size of the breast and how you like it cooked. Give it 10 minutes then prod it the same as you would to check if your steak is cooked correctly. 

 

There is a good guide here but I don't bother transferring to a different pan.

Hah!  So sorry!  It was DELICIOUS.  I finished it in the oven after I crisped the skin and it was a really nice change.  Plus now I have a good sized disk of duck fat for more deliciousness.  :-D
