After seasoning I brown mine in a frying pan skin side down, once it is all crispy I turn it over and put it into a hot oven until it is cooked the way I like which is not too well done but still pink in the middle. Loulabelle Posted March 5, 2015 Share Posted March 5, 2015 Your cast iron skillet is beyond perfect! I use only salt & pepper, on both sides. Oven is hot, around 200c, roasting time depends on the size of the breast and how you like it cooked. Give it 10 minutes then prod it the same as you would to check if your steak is cooked correctly. EmilyK Posted March 10, 2015 Author Share Posted March 10, 2015 Hah! So sorry! It was DELICIOUS. I finished it in the oven after I crisped the skin and it was a really nice change.
