idauria
http://www.freerangecrossfit.com/2012/supreme-egg-loaf/ I cooked a 16oz package of sweet turkey sausages(I removed them from the casing). I put that on the bottom of my casserole and then I sauteed onions, mushrooms, zucchini, and peppers and added that on top of the meat. I beat 8 eggs(that's all I had left) and poured that over the meat/veggie mixture. I had a nice portion plus a mixed green salad on the side for dinner. I will be eating the rest of the casserole for breakfast this week.

There's a recipe around these threads somewhere.
Colleen Roy
Oooohhh. You've inspired me! I have some chicken sausage that I was going to use with sweet potatoes, but used the sweet pots in a curry tonight. Plan B! I'm going to copy your idea! Thanks!
