I cooked a 16oz package of sweet turkey sausages(I removed them from the casing). I put that on the bottom of my casserole and then I sauteed onions, mushrooms, zucchini, and peppers and added that on top of the meat. I beat 8 eggs(that's all I had left) and poured that over the meat/veggie mixture. I had a nice portion plus a mixed green salad on the side for dinner. I will be eating the rest of the casserole for breakfast this week.

That sounds so good. It's also really easy to make your own sausage with just ground meat...no need for casings. There's a recipe around these threads somewhere.
