Moderators ultrarunnergirl Posted January 7, 2016 Moderators Share Posted January 7, 2016 Toss with ghee or melted coconut oil, a little salt, and roast at 400 until they begin to brown (maybe 15-20 min, depending on the size of the cubes). praxisproject Posted January 8, 2016 Share Posted January 8, 2016 I cook butternut pumpkin (squash by name also) in the oven with coconut oil, brown on top and if it's still not soft I turn the heat down and cook it longer.
