I personally would skip it for now, especially if you're used to eating lots of cheese in your foods, just on the general principle of really working to change the kinds of food you're used to eating, rather than just replacing them with a slightly-less-bad-for-you version. That said, there are some Whole30-compliant recipes around that use a macadamia nut "cheese" in place of ricotta, so it's not totally disallowed. Kelp noodles are okay, although you do need to check the ingredients and make sure there's no carrageenan or other non-compliant ingredients in them. A better choice might be to use spaghetti squash or to use a julienne peeler or a spiralizer to make "noodles" out of vegetables. These and pretty much every other question you could come up with have been asked and answered in the forum before -- if you Google Whole30 + whatever you're looking for, you'll find past discussions and probably an answer to any question you come up with. Be careful that you aren't having them too frequently for best results. There are more nutrient dense foods you'll want to eat. I second the roasted spaghetti squash suggestion.
