Yeah I removed it like the recipe says. If you leave it on I'm afraid it will get mushy and gross. I did snack on some before tossing it while cooking though :)

Perfect idea. Like the ends of a wing and the Pope's nose on a whole roasted chicken. :)

Pope's nose?? Is that the tasty little oyster? I discovered it from watching a Thomas Keller video on simple roasted chicken. So tasty.

The Pope's nose is the triangle that is below the cavity. I also love the oyster. I always flip the bird over and grab those. :0)
