ariyunker
So I have a sports tournament coming up and usually for the lunch break I would just go with my friends to wherever is closest to get some food. However, all the places around are defs not compliant. So I was planning on bringing a cooler to the park with me for lunch, so I just need some friendly suggestions on a whole meal that I can pack that will keep. All I keep coming up with is sandwiches but like... can't have that. Thanks in advance for your responses.
Moderators ShannonM816 Posted June 22, 2019 Moderators Share Posted June 22, 2019 It helps if you don't mind eating things cold. Personally I could take most leftovers and eat them cold and be fine, but I realize not everyone feels that way, so some things that are more meant to be cold: salad, lettuce wraps, chicken strips or meatballs or hard boiled eggs with an assortment of sliced vegetables and a dip or two, frittata, chilled soups like gazpacho or borscht. kirbz
You could still very much do a sandwich-ish concept like this: http://www.thedefineddish.com/how-to-make-perfect-collard-green-wraps/. You could make a nice salad like this: https://www.foodiecrush.com/grapefruit-avocado-fennel-salad/. Or you could make a nice salsa like this: https://cookieandkate.com/avocado-peach-salsa-recipe/.
