Janine Costanzo
So I've tried searching this forum and Google for the answer to this, and I'm getting no useful (or worse, conflicting) answers. I love sweet potatoes. I also love the skin of sweet potatoes, after they've been baked and are all caramelized and delicious. So when I eat a sweet potato, I eat the skin too. I know that the skins of regular white potatoes are known to have stuff in them which can be toxic. But what about sweet potato skins? Are they okay (safe) to eat? I know they're not actually related to white potatoes, so I'm hoping they're safe. But maybe someone here knows for sure? Thanks!
Moderators Tom Denham Posted March 9, 2013 Moderators Share Posted March 9, 2013 I used to eat most of the skin of sweet potatoes I took to the gym and never had any problems. There are lots of recipes for sweet potato skins from the likes of Whole Foods Market and Martha Stewart. I think you can safely eat sweet potato skins.
