You guys! I accidentally made ceviche!

This is so simple and SO good. Here's the basic formula:

Homemade, citrus-heavy guacamole + canned seafood = improv ceviche

For example:

4 limes, juiced

2/3 cup onion, finely chopped

2 large ripe avocados, seeded, peeled and chopped

3/4 cup fresh cilantro, chopped

1 large tomato, seeded and chopped

1 fresh jalapeño pepper, seeded, deveined and finely chopped

1 tsp grated fresh lime zest

1/4 tsp ground cumin

3 cans tuna, drained and broken into bite-sized chunks (I highly recommend Wild Planet tuna from Costco)

Place the lime juice, onion, avocado and cilantro in a food processor or blender. Blend until almost smooth.

Place the blended mixture in a mixing bowl. Add the tomato, jalapeño, lime zest and cumin. Stir to combine. Place a lid on the bowl and refrigerate at least 2 hours to chill and allow flavors to blend.

When the guacamole is thoroughly chilled, add the tuna chunks to the bowl and stir to combine.

Serves 3, and serves them really, really well. ¡Buen provecho!

Oops. I was so excited to share this recipe, I didn't write it correctly. Ha!

The guacamole recipe above yields about 3 cups. You'll want to aim for about a 1:1 ratio of seafood to citrusy guacamole. So, use 3 cans tuna instead of 1.

Now I'll edit the recipe so the tuna isn't swimming in an ocean of guac.
