Here's the basic formula: Homemade, citrus-heavy guacamole + canned seafood = improv ceviche For example: 4 limes, juiced 2/3 cup onion, finely chopped 2 large ripe avocados, seeded, peeled and chopped 3/4 cup fresh cilantro, chopped 1 large tomato, seeded and chopped 1 fresh jalapeño pepper, seeded, deveined and finely chopped 1 tsp grated fresh lime zest 1/4 tsp ground cumin 3 cans tuna, drained and broken into bite-sized chunks (I highly recommend Wild Planet tuna from Costco) Place the lime juice, onion, avocado and cilantro in a food processor or blender. Blend until almost smooth. Place the blended mixture in a mixing bowl. Add the tomato, jalapeño, lime zest and cumin. Stir to combine. Place a lid on the bowl and refrigerate at least 2 hours to chill and allow flavors to blend. When the guacamole is thoroughly chilled, add the tuna chunks to the bowl and stir to combine. you_surname Posted April 19, 2013 Author Share Posted April 19, 2013 Oops. I was so excited to share this recipe, I didn't write it correctly. Ha! The guacamole recipe above yields about 3 cups. You'll want to aim for about a 1:1 ratio of seafood to citrusy guacamole. So, use 3 cans tuna instead of 1. Now I'll edit the recipe so the tuna isn't swimming in an ocean of guac.
