Eating the skin and fat is encouraged with pasture raised, grass-fed, organic meats, but not with factory-farmed meats. Conventionally raised, factory farmed animals collect more toxins than their organic siblings and the toxins gather in the fat. So when you are buying cheap meats from ordinary stores, go for lean cuts and trim the visible fat and chicken skin.
